Fried Potato Pancake

Fried potato pancake

  • 2 potatoes, peeled and shredded
  • 1 egg
  • salt
  • pepper
  • coconut oil or other fat for frying


  • Mix grated potatoes, eggs, salt and pepper in bowl
  • Heat coconut oil in frying pan
  • Shape potato mixture into one large or several small "pancakes" in fry pan. Cook until set on the bottom (a nice crust has formed).
  • Flip "pancake" and fry other side.
  • Serve with melted cheese, fried eggs, bacon, etc for a yummy breakfast or brunch!
