Fried Potato Pancake
Yields 2 servings
Share this recipe
2 potatoes, peeled and shredded
coconut oil or other fat for frying
Mix grated potatoes, eggs, salt and pepper in bowl
Heat coconut oil in frying pan
Shape potato mixture into one large or several small "pancakes" in fry pan. Cook until set on the bottom (a nice crust has formed).
Flip "pancake" and fry other side.
Serve with melted cheese, fried eggs, bacon, etc for a yummy breakfast or brunch!
